The chef, Nicolas Frion, creates such delights as raviole de langoustine au citron vert (ravioli with crayfish filling and lime sauce), terrine de foie gras de canard (duck liver pate), melon soup, and shellfish in Muscat wine. We spend the day in the " Bassin d'Arcachon¡¨. The Arcachon was once a luxury resort area where Spanish royalty, Russian dukes, and all sort of artiests came by. You can still see these buildings as you walk along the seashore. On the bay side, pines, houses on stilts, islands, birds and oyster beds create a soft, seaside-holiday atmosphere. On the ocean side, nature is wilder. You have to climb over the sand dunes to discover the foaming waves and the immense fine sand beaches.
